  • 1 (9 inch) unbaked pie shell
  • 3 tbsp. flour
  • 1/2 c. white sugar
  • 4 1/2 c. peeled and sliced peaches
  • 1 1/2 tbsp. fresh lemon juice
  • 1/3 c. brown sugar
  • 1/4 c. flour
  • 1/2 c. chopped pecans
  • 3 tbsp. butter
Combine 3 tablespoons flour and white sugar in large bowl; add peaches and lemon juice. In a bowl, combine brown sugar, 1/4 cup flour and pecans. Cut in butter until creamy. Sprinkle 1/3 pecan mixture over bottom of pie shell, cover with peach mixture. Sprinkle remaining pecan mixture over peaches. Bake at 375 degrees for 40 minutes or until peaches are tender.   • 1 c. crushed fresh peaches
  • Fresh peaches, enough to fill pie crust

  • Juice of 1/2 lemon
  • 1/2 c. sugar

  • 1/4 tsp. vanilla or almond extract
  • Slivered almonds
Fill pie shell with sliced peaches and sprinkle with lemon juice.
Combine remaining ingredients except for almonds and pour over the peaches. Sprinkle almonds on top.
Bake at 425 degrees for 10 minutes; then reduce heat to 350 degrees and bake for 40 minutes more.

* dash salt

* 1 teaspoon finely grated lemon peel
* 5 cups fresh sliced peaches
* 2 tablespoons lemon juice

* pastry for a 2-crust 9-inch pie

Mix sugars, flour, salt, cinnamon, nutmeg, cloves, extract, and lemon peel. Alternate layers of sugar and spice mixture and peaches in pastry-lined pie plate. Sprinkle with lemon juice and dot with butter. Top with a top crust and vent in several places or make a lattice-style crust*. Bake at 400° for 45 minutes, or until golden brown and filling is bubbly.

*To make a lattice top crust, cut dough into 1/2-inch-wide strips. Arrange dough strips across top of filling. Form the lattice by arranging more dough strips at right angle to first set of dough strips, weaving the strips if you wish. Trim dough strips even with the overhang on bottom crust. Soften gelatin in cold water. Heat apricot preserves to boiling point. Add the softened gelatin to the preserves and stir until dissolved. Add the sherry and dash of salt. Cool preserves mixture until it begins to thicken. Place a peach half, cut side down, in each mini pie shell. Spoon cooled

* 1/2 pint whipping cream
* 1 cup powdered sugar, divided

* yellow food coloring

Whip the cream with 1/2 cup powdered sugar. Beat cream cheese with rest of powdered sugar. Fold together the whipped cream mixture and the cream cheese mixture. Spread in the cooled pie shell. Cool in the refrigerator for at least 2 hours. Cover cream mixture with sliced fresh peaches. For the glaze: Mix together the sugar, cornstarch, mashed peaches, water and about 2 drops of food coloring. Boil until clear, stirring constantly.

Gradually add peach nectar, lemon juice, and lemon peel. Cook over medium heat, stirring constantly, until thickened; refrigerate to chill thoroughly.
Arrange half of the sliced peaches in the baked cooled pie shell. Pour half of the chilled glaze
