Ingredients:
  • 1 cup sugar
  • 1/3 cup cornstarch
  • 1/8 teaspoon salt
  • 1 egg, beaten
  • 1/2 teaspoon almond extract
  • 6 cups sliced, peeled peaches
OR
  • 2 cans (28-oz. size) cling peaches, drained
  • 1 unbaked (9-inch size) deep-dish pie crust
***TOPPING***
  • 1/4 cup sugar
  • 1/4 cup brown sugar
  • 1/2 cup flour
  • 1/4 cup margarine
INSTRUCTIONS

Heat oven to 375. Mix the sugar, cornstarch and salt in a large bowl. Add egg and almond extract; mix well. Add peach slices to bowl; toss gently to coat with sugar mixture. Arrange peach slices in pie crust.

For topping, combine sugar, brown sugar and flour in a small bowl. Cut in margarine, using a pastry blender or 2 knives, until crumbly. Sprinkle topping over peaches.

Bake until golden brown, about 30 minutes. Serve peach pie warm or cold...nice...Enjoy it !

Preheat oven to 375 degrees F.

Ingredients:
  • 2 crust pastry or pie dough
  • 6 cups fresh peeled, sliced peaches
  • 3 tablespoons all-purpose flour
  • 1/4 cup firmly packed light brown sugar -- or to taste
  • 1/8 teaspoon freshly grated nutmeg
  • 2 tablespoons butter -- cut in small pieces
  • 1 egg yolk
  • 2 teaspoons water
  • 1 teaspoon white sugar
INSTRUCTIONS

Prepare the pastry dough according to the recipe directions or package and refrigerate. Preheat the oven to 375F. Place the peaches in an 8-inch square baking dish or 2-quart casserole. In a small bowl, combine the flour, brown sugar, and nutmeg. Toss with the peaches, mixing gently until they are thoroughly coated. Dot with butter. On a lightly floured pastry cloth or board, roll out the pastry into a square or circle 1 inch larger than the baking dish.

Roll the pastry onto the rolling pin and then gently drape it over the top of the dish. Crimp the edges of the pastry and press around the top of the dish. Brush the surface with an egg wash made by beating the egg yolk with the water. Sprinkle with the white sugar. With the tip of a sharp knife cut 3 to 4 slits in top of pastry to allow steam to escape. Bake for 35 to 40 minutes or until the crust is golden. The peach pie recipe is ready to serve warm....nice ! Combine 3 tablespoons flour and white sugar in large bowl; add peaches and lemon juice. In a bowl, combine brown sugar, 1/4 cup flour and pecans. Cut in butter until creamy. Sprinkle 1/3 pecan mixture over bottom of pie shell, cover with peach mixture. Sprinkle remaining pecan mixture over peaches. Bake at 375 degrees for 40 minutes or until peaches are tender.   • 1 uncooked plain pie shell
  • Fresh peaches to fill shell (a little under ripe are best)
  • Juice of 1/2 lemon
  • 1/2 c. sugar
  • 2 tbsp. flour

  • 1/2-1 c. cream or evaporated milk (plain milk works too)
  • 1/4 tsp. vanilla or almond extract
  • Slivered almonds
INSTRUCTIONS
Fill pie shell with sliced peaches and sprinkle with lemon juice.
Combine remaining ingredients except for almonds and pour over the peaches. Sprinkle almonds on top.
Bake at 425 degrees for 10 minutes; then reduce heat to 350 degrees and bake for 40 minutes more.

* 3/4 cup granulated sugar
* 1/4 cup light brown sugar, packed
* 2 tablespoons flour
* dash salt
* 1/2 teaspoon cinnamon
* 1/2 teaspoon ground nutmeg
* dash ground cloves
* 1/8 teaspoon almond extract
* 1 teaspoon finely grated lemon peel
* 5 cups fresh sliced peaches
* 2 tablespoons lemon juice
* 2 tablespoons butter
* pastry for a 2-crust 9-inch pie

Preparation:
Mix sugars, flour, salt, cinnamon, nutmeg, cloves, extract, and lemon peel. Alternate layers of sugar and spice mixture and peaches in pastry-lined pie plate. Sprinkle with lemon juice and dot with butter. Top with a top crust and vent in several places or make a lattice-style crust*. Bake at 400° for 45 minutes, or until golden brown and filling is bubbly.

*To make a lattice top crust, cut dough into 1/2-inch-wide strips. Arrange dough strips across top of filling. Form the lattice by arranging more dough strips at right angle to first set of dough strips, weaving the strips if you wish. Trim dough strips even with the overhang on bottom crust.
